Breakfast was the super comforting combo of organic short grain brown rice with coconut milk and apple butter, the creaminess of apple butter and coconut milk make it taste like I added butter! I also had a half a banana with some almond butter.
Here is what I packed for lunch:

Panda Puffs (aka crack) to munch on during my drive in to work, a salad containing baby greens, baby cucumber, blueberries, garbonzo beans and feta (not pictured 1/3 avocado) I took the rest of my Panera fuji apple dressing left over from sunday, it was a good addition to this salad. I also packed ibuprofen which I am learning to hate because my stomach is such a mess now, some Emergen-C, and a key lime Larabar (my favorite!) Oh and some yogi tea!
I also stopped on the way in to work and got a green juice from the juice bar, which was super delish, however there is no photo, as it was raining and I was just trying to make it to work without getting soaked at that point!
Needless to say, I was pretty full until lunch time! But by the time it rolled around I was just ready to take a break, work was intense. And I was still in recovery mode.
So I got home, still didn't feel like going to the gym :( but it gave me a chance to make hubby and I some delicious dinners. Before dinner I had a container of Okios yogurt with some blueberries, hoping the yogurt would help heal some of the damage all of the ibuprofen had done! I drizzled it with a tiny bit of maple/agave.
Here's what the husband had for dinner:

1 Perdue perfect portion chicken breast seasoned with Montreal Chicken, half of a turkey sausage link, green beans and a baby corn on the cob. He was extremely pleased with this meal mainly because it included sausage as a side dish :D
Here is what I had:

Half of a sunshine burger (I am loving these!!) steamed asparagus, and some guac. After I took the picture I mixed up the guac and realized I needed some blue corn chips. It was pretty fabulous. Oh, also not pictured: I had about 1 oz dark chocolate for dessert!
We watched some So You Think You Can Dance and called it a night like old people. It was actually pretty nice to rest and relax!

Yumm your breakfast sounded delicious! I might have to try that out!
Hi Amanda! Thanks so much for stopping by my blog! Yours looks great...I'll have to catch up :)
Oh, and I wanted to tell you to be careful with the ibuprofen...I have major stomach issues from them too. If you can switch to tylenol, it's much much easier on the tummy. Trust me on this one :) Hope you feel better!
