Friday night randomness


This lovely friday morning began with an equally lovely green monster!! I haven't had one all week, so I was excited to whip one up, this one was pretty basic, but totally yummy, here's what went in:

1 med. frozen banana
2 big handfuls steamed organic spinach
1 handful mixed frozen fruit
1 scoop vanilla protein powder
1/2 cup coconut milk - what was left in the carton :(
1/2 cup choc almond milk

I put it in a bowl because I thought it was thicker than it ended up being, I also topped it with blueberries, but they sank to the bottom, LoL, it was still super yummy, like green breakfast soup with blueberries floating around.


Then before I left the house, I had a small bowl of corn flakes with choc almond milk and a big handful of cherries, look how huge these guys are!!


I wish that I could have gotten photos of my lunch, but they just didn't turn out, I did the salad bar from our favorite deli that is just down the road from us. It was so fresh and good, and they had lots of fun stuff on the bar like heirloom peppers, yum!

I stopped at the Turnip Truck, the cutest little health food store ever, also right down the road, after work to pick up some stuff for the week, look at these gorgeous local mixed tomatoes I got:


I also got tons of snacky stuff, so when I got home, I managed to almost spoil my dinner while I was cooking, just tasting everything I got, I can't help it!


sampled some roasted red pepper hummus, they make it fresh there, absolutely delish

On that note, I think I may have found the holy grail of chocolate there as well!!


Green and Black's 72% baking chocolate, it's perfect because unlike some other dark chocolates it's only got 110 cals per serving (4 squares) and it's only got 5 grams of sugar, I can totally live with that. I recently found out that anything over 5 grams of sugar spikes your blood sugar, so I have been trying to be more aware of that. Anyway, the important thing is it tastes GOOD! Yay! The unsweet chocolate is still growing on me, but I don't love it just yet, but this is a good stand by.

So friday is the night that I always try to cook something fun for our dinner in instead of out, (new tradition) but today I was totally indecisive about what to make, so I called the husband on the way home, and asked him what he was in the mood for. And I want to tell you, Hell has officially frozen over, because he requested a repeat of the vegetarian tacos I made earlier this week!! Yay! This made me so happy!!

He also announced during dinner that he only wants me to get the blue corn taco shells from now on, and that on a scale of 1-10 beef tacos are a 10, but these come in close at 8.5! Yay! I will make a healthy eater out of him yet.

I was craving something Italian-esque though, so I just made two diff dinners, no big deal, do it all the time. Here is my mish mash, I don't really know what to call it, except divine. This was the most satisfying meal I've had in a long time, it was pretty easy too, I just grilled a couple of slices of pre-made polenta in a little olive oil, and steamed some carrots, a baby zucchini and some spinach at the same time, then I put all of that in a bowl and topped with marinara, a few black olives, a couple of my colorful tomatoes, and my favorite part, GOAT CHEESE!!! It was so fresh and creamy and just delicious. There is something so good about spinach and goat cheese together. All the flavors in this dish were so bright and fresh! love love love.

Well, bloggy friends, I am off for tonight, I'm looking forward to a girls' day with my mom tomorrow, and I've got to do some birthday shopping for super special husband type person, that should be fun, I'll let you know what we get into!

Those tomatoes are gorgeous! Dinner also looks awesome. As far as the chocoloate, I don't even know what to say. Need some ASAP! Yum!

Lovely tomatoes! I want some of those pretty heirloom tomatoes but they are soooo expensive.

I know, the heirloom tomatoes were a splurge, total impulse buy, I'm usually too cheap for things like that.

Those tomatoes look so fun! The tacos sound great, too.
