Same Salad Different Day


For bfast, I had this week's usual , green monster and a muffin with pumpkin and almond butter. The highlight was that I had used up my Maranatha AB and got to break into the TJs, nothing against Maranatha, but TJs is def my fave over all. Oh, TJs Almond Butter, how I've missed you! Tomorrow morning should be more interesting because I'm all out of green stuff for GMs! I'm thinking about making something a bit more orange with some leftover steamed carrots and pumpkin though! Hmmm... we shall see.

Midmorning I snacked on a Jamfrakas bar, if you haven't had these, you've got to try them. I used to get them at Kroger (my get by store for in between Whole Foods/TJs trips) but they stopped carrying them some time ago, so now I only get them at Whole Foods. Anyway, the Chocolate Cosmocrisp is the best. They are gluten free and have a very short ingredient list, they're made by the Larabar people. And (not that I'm counting!) they only have 100 calories. You can't beat it.





















My coworker and I tried to recreate the green juice from Fresh Blends, it looks the same, but the taste was not quite the same, it was a ginger BOMB, it was a little on the spicy side, I like ginger, but in small doses, this was not my cuppa tea.




























And for lunch I pretty much had an exact repeat of yesterday's salad, this salad makes me very happy. I had a macaroon for dessert... one word... yum. Although, I don't think I made my tummy very happy because we were so busy today that I ate while I worked and that is never good for digestion :( so I followed up lunch with some green tea.




















I ended up having to skip my usual tuesday night workout, abs, legs, and cardio to catch up on some freelance design work at home :( but I guess I can't complain for being too busy in this crazy economy!

But the good thing was this gave me a chance to make one of my fave dinners!




























Veggie Pasta!! I make lots of variations of this, here is what this one contained:

GF Quinoa fusili pasta with steamed carrots, garbonzo beans, tomato sauce, avocado and feta. And I also added an extra special treat which I tried for the first time, kale chips!! If you've never tried these, you've gotta do it! They were amazingly yummy, and so easy.

I just laid them out on a cookie sheet, heated the oven to 375 drizzled a little olive oil on them and baked for 10 min. They were so light and crispy, I'll def be making these again! I also had a glass of Pinot Noir, my fave.
