
Well it was a glorious weekend, but it came and went WAY too fast! Most of the things I had planned didn't happen, but it was still a nice weekend. It was in the 70s most of the weekend, and my weather app on my iPhone actually posted a severe weather warning, citing "unseasonably cool temperatures" how funny is that!
Saturday morning started with this of course:

then some carrot sticks and AB while I loafed around the house finishing up some work for a client before heading to the gym.

My workout included triceps, biceps and shoulders, and I skipped cardio because the husband and I were supposed to run. I called him after I got done with my workout and he was on the way to Panera Bread. (He's on this new diet thing I don't quite understand, but I'm liking it) So I opted to just meet him there because they have one of my favorite salads in existence, the Fuji Apple Chicken salad and after seeing it on Paige's blog the other day, I had to have one! I had them put the dressing on the side this time because they always put too much, and they gave me two containers, and I only used one, so I brought the other one home because that dressing is so amazingly fabulous! :)

So anyway, the plan for the rest of the day was after Kermit got done with the yard work and I got done with the grocery shopping we were going to go for a mid day run (it was like 73 degrees) and then I was going to pack a picnic dinner and we were going to head on over to Arrington Vineyards for some wine and music.
Well, he did the yard, we didn't go running, I went grocery shopping, I prepared and packed up our dinner, and got all dolled up for a fun evening out, and then we hopped in the car for Arrington, by this time it's 8:00, where the day went, I have no idea. So I got on their website on my iPhone to get the address so we could GPS it, and noticed they are only open till 9:00 on Saturdays! It was a super bummer!!

Somewhere in there I also found time to walk the puppy!
So we turned around, put the food in the fridge and went to Longhorn where I had my beloved Strawberry Pecan salad. Oh how I love this salad, and it's only around for a limited time. If you haven't tried it, you've gotta! It's a bed of greens topped with strawberries, glazed pecans, feta, mandarin oranges, and grapes, it also comes with onions and raspberry vinaigrette, but I always get it with no onions and no raspberry vinaigrette, and have them put balsamic on the side. It's a pretty decent sized salad and it's only $4.99!! I think you can add chicken for a little more, but I never do, I'd rather spend the extra on a glass of Canyon Road Chardonnay which pairs perfectly with this salad.
Sunday morning, Kermit wanted to go to church, this made me happy! I got up and made us breakfast, which I really enjoyed since breakfast is my fave meal of the day and we hardly ever get to enjoy it together. For me, I whipped up a GF pancake which I topped with a mixture of AB and unsweetened Apple Butter then sliced a half a banana on top of that and drizzled just a tiny bit of Maple/Agave on top. It was heaven. Kermit requested turkey sausage and eggs.

After church we met his fam for lunch at Longhorn where I ordered my salad and they totally messed it up by putting the raspberry vinaigrette all (aka HFCS) all over it, and I didn't really want to make a huge thing about it in front of his family and all, plus I was STARVING because I hadn't eaten since breakfast and it's pretty unheard of for me to go from breakfast to lunch without a couple of snackies!! Anyway, it was pretty awful, I didn't even eat it all. So when we got home, I immediately had a big bowl of Panda Puffs with banana and AB, super yummy!

Dinner was absolutely my favorite part of the weekend, the husband was being really sweet and agreed to have a "picnic" dinner with me in our new living room at the coffee table since we missed out last night. So we got out all the food I had packed and had our dinner by candle light in the living room with NO T.V. it was so nice.

After dinner, I had this: (it looks like a lot, but it's actually in a small ramekin, it's probably about 1/4 of a cup)

Like I said, I don't really understand the new diet, but I love it because he's says he's not doing sugar, wheat flour, or any other white starches like potatoes, etc.) So we've been experimenting with lots of healthy foods this weekend to see what he likes. I also made him some GF cornbread muffins so he can have some type of bread. I have been a busy bee this weekend buying him all types of foods to try, I am trying not to be too overly excited and scare him LoL. But I have actually gotten my super sweet (crap eater) husband to eat Mary's Crackers and to switch from regular peanut butter to the Smart Balance kind (baby steps, I will totally convert him to almond butter someday!)
These cornbread muffins were super easy, I just used 2 cups white corn meal, 1 cup unsweetened apple sauce, 1 egg, a little salt, 1 tsp. baking powder and then added milk until the batter looked right. I baked them at 450 for about 10 minutes. They are heavy and not sweet at all, but pretty good for just a nice rustic type cornbread.And he's a total soda and sweet tea fiend so to help him make the transition to plain water, I got him some of those 10 calorie naturally sweetened vitamin waters, he loves those too! We shall see where this goes or how long it lasts. The cool thing is he's pretty much eaten gluten free with me all weekend, and not even realized it. How awesome would that be if he ate more of the same foods as me! It would sure help out on the grocery shopping.
That's all for now, I'm exhausted just typing all of this, I'm heading to bed now. I can't wait to see what's in store for Yoga tomorrow!
