Fun Weekend Randomness

Hey guys!!

I am SO excited because the husband is coming home from Nigeria tonight!! He's been deployed there for 3 weeks and I've missed him so much.

Anyway, I've got lots of fun food updates from the weekend. I stayed at my parent's house again because I'm a big ol' baby when the husband is gone and I sleep so much better over there.

My mom is so sweet, she got lots of salad stuff for us to make salads this weekend which was perfect because that is about all I have been wanting here lately is huge fresh salads as summer winds down.

Salad number 1


Friday mom made Yellowfin Ahi Tuna Steak and we had these big fruity salads along with it. She knows I LOVE goat cheese, so she got some and of course I ate tons.

You can see my tuna steak peeking out in the back there. My grandma had made a small loaf of gf bread so we made little crouton things out of it to eat with our salads.

Salad number 2


Saturday for lunch we had these HUGE fruity salads with baby greens, blueberries, grapes, grape tomatoes, sliced pear, goat cheese and balsamic. This was my fave, I don't know why but I just love fruit on salads with goat cheese.

Salad number 3


Sunday before I headed home, we made one more salad and finished off the tub of baby greens. It had black olives, heirloom tomato, sundried tomatoes, yellow pepper, goat cheese and balsamic. And yes those croutons were a little crispy, but they were still good :)

celery/carrot/apple/pear/lemon/giner juice (what an ingredient list) it was really good!


We made my macaroons. I've had a couple of requests for the recipe for these, so my next post will contain the recipe for these little bit sized baby macaroons. They are so easy and only use 4 ingredients!


And my grandma made these amazing gf biscuits, she sent some home with me which made me happy!


She made them in a cast iron skillet, I wish I knew how to use cast iron like that.


I also got to bring home this huge batch of kale and cherry tomatoes from their garden! I'm going to be SO sad when the season is over and I can't have my fresh kale for green smoothies!


I snapped some pics of these gorgeous okra blossoms while I was in the garden. Who knew okra had such a pretty bloom?

Oh, and I almost forgot, my grandma finished my aprons! Here's one:


Well, I am off to work, I can't wait for tonight!! I have missed the husband terribly! He's only home for a little bit then he's got to leave again for Biloxi MS :( So for the next few days I'll probably be spending lots of time with him, but I'll be back as soon as I can! Thanks, everyone for still reading even though I haven't had as much time to blog as usual, I enjoy each and every one of your comments always!! I'll eventually get back to my daily posting routine, but I've got to take care of my clients right now while work is pouring in like it is.

Your salads are killer!!! I am loving all the blueberries in them! I saw one last week at Bread & company that I want to recreate... I think it had blueberries, grapes, pear, cranberries, turkey and feta... yum :)

Can't wait for the macaroon recipe! I was wondering about that :)

Awww, your mom and grandma are super sweet. Homemade bread, biscuits, salads galore. Yuuuum. I love fruit + goat cheese as well (though I prefer mild goat cheese)—deeelicious on salads! Love the apron too :)

Hi Amanda! Thanks so much for visiting my blog last week. I was in a long distance relationship for many years so I can definitely remember that exciting feeling right before the boy comes back!
Your salads are all gorgeous. Are those blueberries or olives in the first one? Either way, I bet it was delicious!
