Simple Tomato Soup


So I had this huge bowl of homegrown tomatoes that really needed to be used up today, they were fading quickly. So I weighed my options, should I make pasta sauce, nope, I'm out of garlic. Should I make homemade ketchup? It sounded good, but how often do I really use ketchup and how long would it keep? So I settled on tomato soup. It was also a great way to get some other veggies used up in the process.


I chose to put celery, carrots, vidalia onion and a red bell pepper into the mix as well

Look at them basking there in the sunlight streaming through the kitchen window not knowing they're about to get chopped up.


I just did a quick coarse chop since I was planning on putting the whole mixture into the food processor at the end anyway.


I threw them into the pot with a little olive oil, and added some salt and pepper. Once they had sauteed a little, I added a tiny bit of water and turned them down and covered to simmer while I went to work on the tomatoes.


(I also enjoyed some hummus and cucumber while cooking and had a double dose of Tazo Zen in my Swamp Thing mug!)




I boiled the tomatoes and plunged them into ice water to remove the skins then I just chopped them into quarters and threw them into a separate pot with a little water to stew. When they had cooked down I ran them through a strainer to catch all the solids and seeds, etc. and then the liquid and the cooked veggies all went into the food processor for a couple of minutes.


Once I tasted the soup, I added a tiny bit more salt, and it was good to go. There is nothing complex or overly flavorful about this soup, it's just simple tomatoey goodness.


I enjoyed a bowl immediately with a little diced avocado and some blue chips on the side. And I would be lying if I said I didn't have a couple more bowls after that. It was pretty tasty!

Love the avocado floating on top! Have you tried making gazpacho? I prefer cold soups in the summertime...so refreshing!

I looooove love love tomato soup...but I've (shamefully) never made it from scratch. I used to eat it with grilled cheese as a kid. Yum.
