Friday night started with Joan's GF Sicilian pizza for dinner, my mom and I split the tray.


Oh. my. goodness. This was so amazingly good. It was ridiculous! And half the tray was only 450 cals! Not bad for pizza.
Joan, you are a very talented lady when it comes to gluten free goodies!
After dinner we had some TJ's tart frozen yogurt!

Saturday morning breakfast was a huge gf Belgian waffle my Nana made for breakfast, I ate half and topped it with black currant jam.

Then we did some shopping, way too much shopping... hmmm this sounds vaguely like a repeat of last weekend, huh!
Then I ended up having dinner at our best friends' house that night. They made grilled chicken and garlic mashed potatoes, mmm. Another couple we're friends with was there too, and we all played scattergories and Battle of the Sexes after dinner. Let me just say, both of those games made me feel like a complete idiot, don't get me wrong, we had a blast, but those games were hard!! I didn't get any photos because sometimes it's more fun to just relax and enjoy rather than capturing every single moment for the blog, ya know!
Sunday morning breakfast was delish. I made us some Pink monsters?!

Yes they turned out pink because I used tons of strawberries. But they did in fact have fresh baby kale from the garden in them and they were absolutely delicious. They also had some Jay Robb chocolate egg white protein powder, so they kind of had a chocolate strawberry thing going on.

We also split another one of Joan's fabulous bagels with cream cheese and strawberry jam.
Later on I made a huge batch of yummy guacamole for the fam to snack on, we really like guacamole in my family!



We made a lovely pasta salad for lunch with brown rice pasta, black olives, feta, grape tomatoes, sundried tomatoes and Italian dressing.

I've got way too much fun stuff to fit into one post, so I'm going to split it into two or three, but here are some sneak peaks at what's to come!

And my mom and I made the best GF brownies I've ever eaten...EVER!

These little guys clocked in at only around 115 calories each and were completely flourless. They were so good and easy to make! Details and recipe to come soon!

and it made me cry. Story to follow! :)

That pizza does look amazing! So does the chocolate strawberry shake, guac, and brownies! Mmmm~ Love the grape tomatoes as a garnish on the guac too. Makes it extra pretty =)

Your brownies look incredible!! I love your take on them. I also must appreciate your definitive approach to baking chocolate. I have one too, and our opinions differ but that's what makes this world interesting.
On another note - we might be kindered souls. I LOVE old cookbooks, especially Better Homes & Gardens. I grew up with that. And, I got a 1976 edition (the year I was born) of The Joy Of Cooking and cherish it.
I also LOVE aprons, especially vintage ones. I have an apron on all the time. (Need some more...mine are getting thread bare.) Are you planning on marketing those?
I just discovered TJs tart froyo and I am SOOO addicted!
