
These are kind of a spin off of the Fitnessista's raw version, but my oven won't go down low enough to do raw and I don't have a dehydrator, so I modified. I eat these all the time and have gotten a couple requests for the recipe, so here goes!
These are SO easy to make and they only use 4 ingredients!

5 oz. bag unsweetened shredded coconut
1/4 cup maple syrup (I use TJ's maple/agave blend)
1/4 cup raw almonds
6-8 dates
Preheat oven to 350. Put dates and almonds in the food processor and process until they are well ground. Add coconut and maple syrup, process until all the ingredients are well blended. Scoop onto foil lined cookie sheet. (I use the Pampered Chef small scoop to make small bite sized macaroons, but you can use an ice cream scoop to make larger ones if you'd like.) Also at this stage you'll have to do some packing, these work best if they're tightly packed before baking, if not, they'll be a little crumbly. Place in the oven and bake until the edges and tops begin to brown (This usually takes around 10-15 minutes, I've found that this really varies from oven to oven, I just keep an eye on them)
This recipe usually yields anywhere from 14-18 bite sized macaroons.

This particular batch came out really well, I crumbled one up over some Oikos and blueberries and made a parfait it was ah-mazing!
Another way I love to eat these is slathered with AB/AB
Okay, so I've been totally lazy the past few days about blogging, plus I've been enjoying every second with the husband while he's home (he's leaving tomorrow for 7 weeks) :(
Anyway, here are some foodie highlights from my hiatus! :)
Had my first stuffed dates, holy yum these are good! Kermit (the hubs) thought they looked like the grossest thing he'd ever seen me eat which is saying a lot LoL.

Had one of my fave breakfasts:

brown rice/almond bread toasted, half with cream cheese and jam, half with almond butter/apple butter and grapes!

Had some lovely juice (also, the husband decided he is not a fan of juice)

pretty much ate my weight in pears, for some reason I've decided I am totally in love with pears this year.
Had some toasted rice bread with AB/AB, sooo good.

had my fave salad from Panera (Fuji apple chicken yummm)
still loving my Joan's GF bagels!!
And not food related, but I snapped this pic of the hubby helping me hang some mirrors I got for the living room from Hobby Lobby, I got all three for $30 because they were half price, and I got this super cute tea box for only $7! I love Hobby Lobby's half price sales!



I am off to catch up on some work (yes, sadly, I am having to do a little work from home over this beautiful long weekend) but it's better to have too much work than to have none, right!
